Soup is an essential winter meal and when it comes to picking our favorite, this broccoli cheddar soup has earned the top spot. Brrrrr! it’s getting cold outside and the best way to stay warm is with this hearty broccoli cheddar winter soup. Even as snow falls, days get shorter, and cold winds blow, this recipe is nourishing and uses many basic pantry items.
It’s a favorite for kids because of its creamy texture and cheesy flavor, and it’s loved by parents because it’s secretly loaded with a ton of nutritious veggies.

Broccoli cheddar soup
Ingredients
- 8 tbsps olive oil or butter taste preference
- 1 large onion finely chopped
- 1 large carrot shredded or peeled and finely diced
- 4 cloves garlic cloves minced
- 1/2 cup flour or corn starch (gluten-free)
- 1 pinch Salt and pepper to taste
- 3 cups Chicken or Veggie broth (12-ounce)
- 1 head head of broccoli cut into medium florets, stem peeled and diced
- 2/3 cup grated sharp white cheddar cheese
- 2 tbsps 2 teaspoons Dijon mustard or dried mustard powder taste preference
- 4 medium croutons optional
- 1 dash paprika or red pepper flakes taste preference
Instructions
- Start by sauteing butter and onions until they begin to soften. Add in garlic and cook for 1 minute longer. You never want to saute garlic for too long or it can become brown and bitter. No one likes brown and bitter garlic.
- Make a roux by adding more butter, flour, and chicken broth. This is the base of the soup and helps to thicken it.
- Add in seasonings, fresh broccoli, carrots, and half-n-half. A quick and easy tip is to use a food processor to cut your onions, garlic, carrots, and broccoli. It is a huge time saver! You just need to pulse it once or twice. After the liquid is added let the soup simmer and thicken.
- The key to making this extra-creamy and not ending up with a grainy texture is to add cheese in small amounts. You want to add the cheese in ½ cup increments and stir well between each addition.
