The Grits Breakfast Bowl

Ingredients

  • 1 bowl hot creamy grits
  • 1 egg, fried soft or poached
  • Greens or blistered tomatoes
  • Bacon, sausage, or none at all
  • A little extra cheese
  • Hot sauce, to wake it up

Method

  1. Start with a hot bowl of creamy grits. Make a shallow well in the middle with the back of a spoon.
  2. Sauté your greens or tomatoes in a little fat while the grits stay warm.
  3. Land the egg in the well so the yolk runs into the grits when you cut it. That’s the whole magic.
  4. Pile on your protein, a shower of cheese, and as much hot sauce as your morning can handle.

The rule of the bowl: something creamy, something runny, something crisp, something spicy. Hit all four and you can’t miss.
