Grits Casserole

Apple Ginger Mocktail


Cajun Shrimp and Grits
Equipment
- Large Skillet
Ingredients
- 5 thick slices bacon chopped
- 1-1½ pounds extra large or jumbo shrimps peeled and deveined
- 1 tsp Cajun salt
- 2 tsp garlic minced
- 1 tsp smoked paprika
- ½ cup red bell pepper diced
- 2 tbsp parsley chopped
- 2 green onions thinly sliced
- ¼ cup broth or stock adjust quantity to preference
- ½ lemon optional
- salt and pepper
Grits
- 2 cups water
- 3 cups milk or sub with water
- 1 bay leaf
- salt to taste
- 1 cup quick grits
- 3-4 tbsp unsalted butter
- 1-2 cup sharp white cheddar cheese
Instructions
Cajun Shrimp
- In a large skillet over medium heat, saute bacon until brown and crisp. This make take 3-5 minutes.
- Remove bacon from skillet and transfer to a plate. Save the bacon drippings left on the pan.
- Add about a tablespoon of oil or butter to the pan, followed by the shrimp. Season with Cajun salt, and sauté the shrimp for 3–4 minutes. Set aside.
- Add garlic, paprika, bell pepper, parsley, and green onions to the pan. Add the broth. Cook for 3 minutes.
- Add shrimp to the pan. Add the lemon juice, if desired, and adjust to taste. Throw in the crisp bacon, and season with salt and pepper.
- Remove the mix from the heat and serve over your grits.
Grits
- Start by adding water, milk, bay leaf, and salt to a heavy saucepan. Bring to a boil.
- Gradually whisk in the grits until you have added them all to the pot. Keep stirring with a whisk to prevent lumps. You may need to remove the saucepan from heat while getting rid of lumps.
- Reduce heat and cook grits at a bare simmer, covered, frequently stirring, and until water is fully absorbed and the grits thicken. This will take about 15 minutes.
- Then remove grits from heat; add butter and cheese. Stir with a whisk until the cheese melts.
- Assemble the dish. Place the grits at the bottom of a shallow bowl, then the Cajun shrimp and sauce on top. Enjoy piping hot!

Fried Okra
Ingredients
- ¾ cup cornmeal
- ¼ cup flour
- 1 tbsp granulated garlic
- 1 tbsp onion powder
- ⅓-1 tsp cayenne pepper
- 1 tsp white or black pepper
- 1 tsp salt adjust to taste
- 1 cup buttermilk
- 1-2 pounds okra cut in pieces
- ¼-½ tsp dried thyme optional
Remoulade Sauce
- 1 cup mayonnaise
- 1 ½ tsp minced garlic
- ½ lemon
- 3 tbsp creole mustard
- 1 tsp hot sauce adjust to taste
- 2 tbsp relish
- 1 green onion finely chopped
- 1 tsp Worcestershire sauce
- ½ tsp creole seasoning optional
- salt to taste
Instructions
- Mix all ingredients for the remoulade sauce in a medium bowl. Keep refrigerated.
- Preheat a deep-fryer or large sauce pan to 375 degrees Fahrenheit. Pour vegetable oil halfway.
- In a large bowl, mix cornmeal, flour, garlic, onion powder, cayenne, thyme, white pepper.
- Mix buttermilk and eggs. Add salt to taste. Set aside.
- Dip okra in the buttermilk mixture and lightly dip it into the cornmeal-flour mixture.
- Fry coated okra, a few at a time, until slightly brown, and crispy. Remove from the fryer with a slotted spoon, and place on a cookie rack to ensure crispness.

Banana Granola Bread Pudding With Vanilla Sauce


Deviled Eggs
Ingredients
- 6 large hard-boiled eggs peeled
- 3 tbsp mayonnaise
- ½-1 tsp Creole seasoning adjust to taste
- ½-1 tsp hot sauce adjust to taste
- 1 tbsp sweet pickle relish
- 1 tsp mustard
- salt and pepper to taste
Instructions
- Place eggs in a medium saucepan, and cover with cold water. Bring the water to a rolling boil. Once boiling, cover the pot and remove from heat. Do not lift the lid until it’s time to remove the eggs. Let it sit for 10–12 minutes. Remove and crack one egg open just to make sure.
- Remove the egg yolks and place it in a medium mixing bowl. Add mayonnaise, creole seasoning, hot sauce, salt, sweet pickle relish, mustard and pepper. Whisk the ingredients until creamy and smooth.
- Spoon egg yolk mixture into a small resealable plastic bag. Cut a small corner from the bottom of the bag. Pipe the filling into egg-white halves.

BLAC Happy Hour Classics: Slo Gin Fizz
Equipment
- 1 Highball or Collins Cocktail Glass
- 1 Cocktail Shaker
- 1 Cocktail Strainer
Ingredients
- 1 1/2 oz sloe gin
- 1 oz Fresh lemon juice
- 3/4 oz simple syrup simply, of equal-parts granulated sugar and water
- Club soda, to top
- 1 wedge lemon wedge
- red cherry garnish
Instructions
- Add the sloe gin, lemon juice and simple syrup into a cocktail shaker with ice
- shake until well-chilled.
- Fill a highball or Collins glass with ice
- Strain the contents of the shaker into the glass.
- Top with the club soda
- Garnish with a lemon wedge and a cherry.

Ingredients
- 2 oz E. Cuarenta Reposado Tequila
- 2 oz orange juice
- 1 oz lime juice
- 1 oz amaretto
- Lime wheel garnish
- Sugar or salt optional
Instructions
- If desired, cut a lime in half and rub along the rim of the glass.
- Dip glass into sugar or salt and set aside.
- In a cocktail shaker, add all ingredients with ice and shake.
- Strain into a rock glass filled with ice and garnish with lime wheel.
