Who needs bowls when you can eat out of a pineapple? The famous pineapple bowls at the Memphis Pineapple Express truck definitely have us rethinking this after trying a shrimp teriyaki bowl! The pineapples are hollowed out, filled with rice and pineapple salsa, the protein of your choice, jerk or teriyaki seasoning, and then drizzled with a deliciously tangy secret sauce. Chef Cammy Henry serves each one with a smile so big, a mask can’t hide it. Other menu items include an island burger, an island chicken sandwich, and wings - all of which come with fries. 5963 Summer Avenue is a regular spot, and weekends are a good time to find them open.
